Who can say no to a pizza party at Celini ? Chef Persico Alessandro Davide has been tantalizing our tastebuds there for ages with his apologetically Italian style. ( Psst… his Tiramisu and Gnocchi & to die for ! )
When we heard that Chef Pasqualino Barbasso was set to visit Grand Hyatt all the way from Sicily, we jumped in excitement imagining the magic the Chefs would create in the Celini Kitchen.
For those of you who don’t know Chef Pasqualino Barbasso, he is a world World Champion Pizzaiolo Acrobat ( Free style acrobats using pizza dough ) who is on a mission to make high end quality pizzas in the most entertaining way… how ? Like this –
Now wasn’t that crazy entertaining? And that was just a drop in the ocean compared to Chef Pasqualinos talent.
After an amazing show, we got down to business…. PIZZZAAAAAAAAAAAA !!!
Asparagi e Salmone Affumicato (Asparagus and Smoked Salmon )
An earthiness from the asparagus cream & Asparagus, delicate texture and smokey flavor of the salmon, softness of ricotta, milky-cheesiness of mozzarella, and pungent hints from parsley made this pizza our favorite of the evening ! A must have !!
Sapori di Bosco ( Wooden flavours )
Another absolute favorite of the table… well who doesn’t like a good pepperoni pizza? This Pizza had a very generous layer of pizza sauce with a blanket of mozzarella cheese garnished with spicy pepperoni salami & delicious porcini… gosh… ** cravings **.
Alle Noci ( Nuts )
Mozzarella, Gorgonzola & shaved parmesan, isn’t that enough to crave for this pizza? This cheesy delight was teamed up with walnut, walnut cream & rocket leaves to give it a delicious nuttiness. If you love the different flavours of cheese, then the Alle Noci, you will definitely go nuts !
Arrotolata ( Rolled )
This pizza was rolled to form logs and each roll was cut into strips & filled with artichoke cream & mozzarella. Topped with Prosciutto ( Parma ham), rocket leaves & shaved parmesan, these gooey log strips tasted great.
Pretty as a picture is how we would describe this pizza. Cherry tomatoes & Lamb Bresaola over dollops of Stracciatella Cheese, garnished with rocket leaves. As all the ingredients were scattered over the base, each bite reveled a different taste.
Now there were a lot of other pizzas on the menu, that we couldn’t try out ( we blame it on the Asparagi e Salmone Affumicato )
Indigo Mozzarella, palak paneer ( Why? Palak Paneer is one of the Chef’s favourite Indian dishes )
Chikkiniki Mozzarella, chicken tikka, onion, spinach ( His second favorite Indian Pizza dish is Chicken Tikka ! )
Lemon Meringue Millefoglie We loved its playful preservation ! A lovely moist Millefoglie with crushed tangy lemon meringue topped with an upside down ice cream cone, a bevy of textures and flavors made it a memorable dessert.
Cuore di Cioccolata Calda When that molten dark chocolate oozed out of the warm chocolate cake, our hands just dove in ! Team up with a Vanilla ice cream, dark tempered chocolate & crisps, this was the favorite on our table.
Cannoli Pastry rolls with a sweet cream-ricotta filling. We suggest as soon as you take a bite into your cannoli, pop the tempered chocolate in as well and enjoy the creamy chocolate & crispy pastry.

Chef began his career, in his family’s Pizzeria, Il Falco Azzuro, in Cammarata, in the Sicilian province of Agrigento. He underwent formal pizza-making training only at a later stage when he decided to dive into the world of pizza acrobatics. A pizzaiolo since the age of 17 & two-time World Champion of Pizza Acrobats, chef is very excited to showcase his exemplary skills in Mumbai at Celini from March 24 – April 2, 2017.
