What if we told you could cure diabetes & a number of ailments
with pizzas, pastas & ice creams…?
Hard to believe, but its true!
We discovered this delicious secret at the Bird Song Cafe last week thanks to
The brief we were given about the meet up was an introduction to healthy food
that helped a lady overcome her diabetes, high blood pressure & more… now imagine our surprise when the first dish we got to try out was a pizza !
Now this pizza was not only organic but also gluten free & vegan. A pizza… with VEGAN cheese…. whaatttt? ( Well we will leave that secret for another blog post ! )
The crust of the pizza was kind of like a vegetable cookie & the toppings ( Basil, Capsicum, Sweet Corn, Bell Peppers, Vegan Cheese ) came together fantastically. We couldn’t believe there was no ‘real’ cheese…!
The next delight we got to taste were the Jowar Crackers which were crisp
and perfect for snacking, especially when teamed up with their
Vegan White Makkhan (Butter) , which was the star on the lunch.
A hint about the recipe… the Makkhan had a coconut base.
The Cheesy Dip, again completely vegan, and delicious ! Loaded with some chopped veggies for a fun bunch of textures, this dip went perfectly well with the…
… Bajra Methi Crackers. A perfect brittle with hints of spice; move over khakra’s… these bite sized cruchies are hunger pang saviors & easy to carry around.
A lovely sour & very cheesy white sauce Veggie bake
is a perfectly filling dish for lunch, & nutritional too.
Oats nuts and seeds chewkies aka chewy cookies, taste just like the delightful
nutty chikki’s we try and grab at Lonavala, only healthier !
The Vegan chocolates &
Chocolate Almond Ice Cream had one major component in their preparation, namely dates. Both were definitely a healthier option to what was available in the market as well a had completely unique flavours.
The Badam Kesar Pista Kulfi was the favourite of the table and a perfect way to end the tasting. A cold slushy-solid delight packed with flavour & not overly sweet…. we all even dove in for seconds!
To be honest we were quite baffled as each dish was presented & we were dying to know more about where & how the dishes originated.
The artist behind these boggling preparations was Mayavi Khandelwal, CEO of My Pure Path, who took us through the details of every dish & her journey which takes a lot of will power to go through with.
For years Mayavi has been suffering from diabetes, hypothyroid, high blood pressure & was constantly on medication. Infact, she was even instructed to get admitted due her constant rise in sugar and blood pressure levels; and it was then she decided that enough was enough. She decided to end her futile relationship with medicines & connected with Dr. Pramod Tripathi who helped her turn her life around completely.
She told us, “I was diagnosed with very high diabetes and was overweight. By going vegan, I was able to loose over 25 kgs weight over 2 years and completely reversed my diabetes, hyperthyroid and high blood pressure in 1 year.
I am off all medications and haven’t visited the Doctor for over a year. The transformation was incredible and not long after, I found myself in better shape in my 50s than when I was in college. The only change I made was going vegan, but there was one thing in particular I learned during that time. If the food wasn’t tasty, I wasn’t going to eat it! And that’s why I learned how to cook, eventually leading me to become a chef, which in turn led me to sharing my knowledge with you.”
We were left astounded by Mayavi’s dedication & commitment.
Our time spent with her at the Bird Song Cafe was an absolute eye opener & we couldn’t be more grateful for this unique experience.

Now the dishes we tasted were just the tip of the iceberg, Mayavi has a bunch of amazing dishes that she offers through her Tiffin Service, Catering, Demo Workshops under the name My Pure Path which are:* 100% vegan.* Use only Organic fruits, Vegetables & grains.* Provide variety as their menus change every week, covering cuisines from around the world, from artisan to comfort food.* Contain no processed oil, the oil comes from the nuts and seeds.* Contain no processed white Sugars. The only processed sugar they use is organic jaggery. Their sugar is mostly from dry fruits such as dates, raisins and anjeer, etc.* Gluten Free. The only gluten food on their menu is Pearl Barley. All their breads are made from Red Rice, jowar or bajra.
